Curried Lentil One Pot Recipe from The Vegan Chef School
Does anyone else just love a one-pot dish? We do! Still packed with flavour as all the flavoured combine together in one simmering pot, but with easy clean up afterwards!
As it’s Veganuary, we thought we’d share a lovely vegan winter warmer – here’s a curried lentil dish filled with warming flavours from The Vegan Chef. The lentils are packed with protein to keep you full, it’s all full of veggies and antioxidant-rich spices.
3 large carrots, cut into bitesize pieces
2 sticks celery, finely sliced
1 large onion, finely sliced
200g cavolo nero, leaves removed from stems and roughly chopped
1c green or brown lentils
1/2c split red lentils
3-4T spice mix*
1T stock powder
2t ground turmeric
Salt, to taste
2 tins (400g each) of chopped tomatoes
4T creamed coconut
