Beauties, it’s soup season! As the weather outside cools, nothing is more comforting than a warm bowl of nourishing soup.
This soup from The Saffron Stories brings in traditional french flavours with her own twist to make a beautifully warming soup. We’ve included the ingredients below but head over to her website for the full method.
INGREDIENTS
For soup:
- 3 Tbs Olive Oil or Avocado Oil
- 2lbs Asparagus, tough ends trimmed and chopped into 1 inch pieces
- 5 cups Vegetable Broth
- 1 Onion, chopped
- 1 Clove Garlic, minced
- 2 Stalks Celery, chopped
- 1 tsp Sea Salt
- 1/2 tsp Fresh Ground Pepper
For cashew cream:
- 1 cup raw cashews
- 3/4 cup water
